Fresh salsa is my favorite indulgence. Forget the chips and dip some celery sticks in it for the same crunch without wasting calories.
1 28 oz can of Muir Glen fire roasted tomatoes (I’ve tried others, trust me these are worth it)
1 7.5oz can of fire roasted green diced chilies
1Tbsp of minced garlic
2 green onions chopped
1Tbsp olive oil
2tsp red wine vinegar
1/4 tsp dried oregano (or fresh)
1/4 c chopped cilantro
Pink Himalayan salt to taste
Freshly ground black pepper to taste
1 tsp chili powder
2 tsp lime juice
Just mix it all up and refrigerate. It’s always better the next day and this makes a big batch that will keep in the fridge about 3-4 days.
